I love Taco Bell! Which is why I’ve recreated more popular menu items like the Creamy Jalapeño Sauce found in the Chicken Quesadillas or the Fiesta Potatoesthat were once in the Cheesy Potato Griller.Many items seem to be discontinued now, but hopefully I can bring back some of your favorites!

The Original Grilled Stuffed (Stuft) Burrito

Taco Bell has changed many menu items within the last decade! Back in the day the Grilled Stuft Burrito was my favorite! It was originally a flour tortilla stuffed with refried beans, the best burrito sauce called Baja sauce, rice, a three-cheese blend, and fiesta salsa (known as pico de gallo) then grilled in a commercial grill press. Customers had the option of upgrading it to grilled chicken, steak, or ground beef, but believe it or not I ordered mine without ANY meat (Vegetarian approved!) I would request extra cheese with lots of baja sauce and it was still huge! Besides, how could you not love Baja sauce? It was the BEST!

What Happened to The Grilled Stuft Burrito?

Taco Bell eventually discontinued the Grilled Stuft Burrito and later around 2009 Taco Bell Launched an XXL Grilled Stuft Burrito with seasoned beef, a three-cheese blend, rice, refried beans, sour cream, guacamole, pico de gallo, and avocado ranch. It wasn’t the same anymore and certainly didn’t meet the expectations of the original. As of a result, both toasted burritos are discontinued today.

Thankfully, Taco Bell sells Baja Sauce in squeezable bottles right in the Mexican aisle of major Grocery Stores (like Walmart!) So, bringing back Grilled Stuft Burritos is possible! And if you can’t find Baja Sauce just make my Creamy Jalapeño Sauce!

Furthermore, if you don’t own a Panini Pressjust use a skillet to toast each side. These Burritos come together so quickly and taste like Original Grilled Stuffed Burritos I’d order back in the day! So happy I can make them at home for a fraction of the price!

What goes in a Grilled Stuffed Burrito?

The Grilled Stuffed Burrito was made of rice, refried beans,pico de gallo (Fiesta Salsa), baja sauce, and a three-blend cheesewith a choice of seasoned beef, steak, or grilled chicken.

Ingredients for the Grilled Stuft Burrito:

  • Flour tortillas- large10-inch flour tortillas
  • Cooked rice-cook 1 cup of uncooked rice to get 2 cups of cooked rice
  • Pico de gallo-any fresh salsa or make your own by mincing onion, cilantro, and tomatoes
  • Baja Sauce-sold in most grocery stores
  • Mexican Cheese-or any 3 cheese blend
  • Refried Beans-canned or mash your own pinto beans with taco seasoning
  • Optional grilled steak, grilled chicken, or seasoned ground beef

XXL Grilled Stuffed Burrito vs Grilled Stuffed Burrito?

The XXL Grilled Stuffed Burrito came with seasoned beef, a three-cheese blend, rice, refried beans, sour cream, guacamole, pico de gallo, and avocado ranch.

However, the previous Grilled Stuffed Burrito was made of rice, refried beans,pico de gallo, baja sauce, and cheesewith a choice of seasoned beef, steak, or grilled chicken.

Both Burritos were grilled and stuffed however, variations later changed and today both are discontinued.

Did Taco Bell Discontinue the Grilled Stuft Burrito?

Yes! Today both Grilled Stuffed Burritos are discontinued of which were the Grilled Stuft Burrito and XXL Grilled Stuft Burrito. Both variations were prepared differently and had different sauces.

Can I Make the Fiesta Salsa?

To make a Quick Pico De Gallo for these Burritos, simply mince;

  • 1/2 white onion
  • 1/2 cup fresh cilantro
  • 1 beef steak tomato

Toss everything together and use as the fresh salsa for this recipe.

How to Prepare Rice for Burritos?

I make seasoned white jasmine rice for Grilled Stuffed Burritos. If you wish to make Mexican rice (aka orange rice) simply add a Goya Sazon packet for the salt. Here is how to make just enough rice (with no leftovers) for these burritos:

Ingredients:

  • 1 cup uncooked rice
  • 1 1/2 cups water
  • 1/2 tsp salt
  • 1 Tbsp oil

Instructions:

  1. Throw everything together into an Instant Pot and select rice setting.

This makes just enough rice for 6 large burritos.

I don’t have refried Beans can I use other Beans?

Yes! If you don’t have refried beans you can simply mash a can of pinto beans or (red Kidney beans.) Dump a can of beans into a saucepan and mash together with taco seasoning. Scoop warm beans into burritos, otherwise they thicken as they sit. Go with 2 Tablespoons of taco seasoning per every 15-ounce can of beans.

Tips:

  1. Mash your own beans with taco seasoning for refried beans.
  2. Buy Fresh salsa or pico de gallo! It will save you time or make your own with only 3 ingredients!
  3. Use a Panini Press for even browning!
  4. For heartier Burritos add 1 lb of seasoned ground beef, grilled steak or chicken.

  • 6 flour tortillas (10-inch)

  • 2 cups cooked rice

  • 1 1/2 cups pico de gallo

  • 5 oz Taco Bell's Baja Sauce (found in most Grocery Stores)

  • 2 cups Mexican cheese (shredded)

  • 15 oz refried beans (heated per can instructions)

Instructions

    Top each tortilla with 1/3 cup of beans, 1/2 cup rice, 1/3 cup of pico de gallo and cheese.

    Drizzle with 2 Tbsp of Baja sauce and roll up tortilla tucking in the sides.

    Grill in preheated griddle press at 425°F for 24-30 seconds.

Notes

  • Refried beans:use store canned refried beans or mash 1 1/2 cups of pinto beans with 2 Tbsp of taco seasoning. Heat thoroughly before using.
  • To Cook Rice:combine 1 cup uncooked rice, 1 1/2 cups water, 1/2 tsp salt, and 1 Tbsp oil into the instant pot and cook at rice setting or make as instructed for my stovetop rice.
  • To Make Pico De Gallo:mince together 1/2 cup cilantro, 1 beef steak tomato, and 1/2 white onion.

    I just made this and it is EXACTLY like the old grilled stuffed burritos. I added steak to my recipe and chopped it super small just like Taco Bell did. This was a great recipe and thanks for the tip on how to spice up the refried beans.

    I also make your chicken quesadilla recipe quite often. People love it.
